This one really stands out for me, as i find it's orchestrated so beautifuly.

For my entry, I'd suggest the Linda Ronstadt discography.
Everything she did was a cover, and she knocked 'em out of the park.

Another would be two covers of "Well, Alright" by Buddy Holly.
Eric Clapton and Steve Winwood die a great cover, then Carlos Santana took that one and nailed it.
